This meal will fill you up and leave you feeling great!
INGREDIENTS – 1 serving
- 1 tablespoon bacon bits
- 1.5 cups cauliflower or 1 cup whipped cauliflower
- 1 tablespoon nutritional yeast
- ¼ teaspoon each: garlic powder, onion powder, salt
- 1 egg
- 2 oz cooked ground beef
- 2 tablespoons diced onions
- ½ teaspoon minced garlic
- 1 teaspoon each: low-sugar ketchup, mayo, mustard
- Salt and pepper to taste
- Garnish as desired with sliced olives, parsley, chopped onions, spices, etc.
Anything that makes it look pretty.
INSTRUCTIONS
- Preheat toaster oven to 400 degrees F. Grease a small baking dish.
- Steam cauliflower until fork tender. Add to a high speed blender and blend to combined.
- Add nutritional yeast, salt, garlic powder, onion powder, white pepper, and eggs and blend until super smooth. Set aside.
- Place cooked ground beef in a pan. Add salt, ketchup, mustard, mayo, and half the bacon. Add salt and pepper to taste.
- Pour beef mixture into the greased baking dish and spread evenly throughout. Pour cauliflower mixture on top and spread evenly throughout. Top with the rest of the bacon and any garnishes you want to bake in.
- Place in toaster oven to bake for 8 – 10 minutes, until top has slightly browned.
- Top with any final garnishes before serving.
